Palm Jaggery Manufacturing Process

The process of making palm jaggery does not involve the use of any chemical agents, hence all the natural minerals are retained as no preservatives are added. Palm Jaggery is proven to have several health benefits as well. The sap from the palm sapling is extracted skillfully. The sap that oozes from the sapling is collected in earthen pots. The pots are coated with slaked lime to ensure that the sap does not ferment. The unfermented juice is filtered and then boiled till it bubbles in iron vats.
