Candied Walnuts brown sugar Ingredients 1 cup walnuts 1/4 cup + 1 tablespoon golden brown sugar, both packed (do not use dark brown) 1/4 cup water 1 tablespoon unsalted butter 1/8 teaspoon + 2 pinches salt Instructions Place a piece of parchment on a dinner plate (approximately the size of the plate) or any other heat proof plate. Set aside. Place all ingredients (except two pinches salt) in a medium non-stick skillet. Place skillet over high heat and cook (stirring occasionally) for 5 minutes (stirring constantly in the last minute), until all moisture evaporates and the nuts get darker, glossy and begins to clump together (refer pictures). Immediately transfer nuts (scraping any remaining caramel off the pan) on the prepared parchment. Spread the nuts, so that they are in a single layer and sprinkle 2 pinches salt evenly on top of nuts.  Let cool to room temperature and break apart with your fingers.  Store nuts in a container for several days &

Easy chocolate molten cakes Ingredients 100g butter, plus extra to grease 100g dark chocolate, chopped 150g light "brown soft sugar" 3 large eggs ½ tsp vanilla extract 50g plain flour single cream, to serve Method STEP 1 Heat oven to 200C/180C fan/gas 6. Ragi pudding with brown sugar Ingredients 3 tbsp ragi flour 2 tbsp "brownsugar" 1/2 tbsp coco powder 2 tsp choco chips 1/2 cup milk 1/2 cup water Method In a cup add water and milk, mix well,Set aside. Holiday Warming Wassail with brownsugar INGREDIENTS 8 cups apple cider 2 apples, halved 2 cups cold-pressed orange juice 1 large lemon, juiced 3-4 cinnamon sticks 1 vanilla bean 10-15 whole cloves 2 ginger tea bags ¼ teaspoon ground nutmeg 2 tablespoons brown sugar Optional: 1 cup spiced rum Optional: orange slices for garnish PREPARATION Insert the cloves into the apple halves. Place the clove-studded apples into a large pot or Dutch oven. Fill the pot with the cider, orange juice, the juice of one large lemon. Bring the heat to medium-low. Stir in the brown sugar and nutmeg. Add the vanilla bean and the cinnamon sticks. Bring the liquid to a simmer and maintain that simmer for 30-40 minutes. Stir occasionally as the liquid simmers. In the last 5 minutes, add the spiced rum, if using, and stir to incorporate. Remove the cinnamon sticks, vanilla bean, tea bags, and the clove-studded apples. Stir and ladle into cups to serve. Watermelon Dhokla

Watermelon Dhokla Ingredients  2-3 servings 1/2 cup semolina 1 tbsp. roasted chickpea flour 3/4 cup watermelon juice or as required 2 tbsp. sugar or as required (I added brown sugar) pinch salt 1 tbsp. melted ghee / butter 1/4 tsp. cardamom powder 1 tsp. eno fruit salt chopped pistachio and dry rose petals to garnish Steps In a bowl, take the semolina and roasted chickpea flour. Mix well. To it add the watermelon juice, salt, melted ghee, cardamom powder and sugar. Whisk to combine well. Keep aside for 10 minutes. After 10 minutes, whisk again and adjust the consistency by adding more watermelon juice if required. The batter should be of pouring consistency. Add eno fruit salt and give it a gentle stir. Pour into a greased steel container and steam for 15-20 minutes. Insert a toothpick to check for doneness. Set aside to cool. Then demould on a plate and cut as desired. Oatmeal with banana Ingredients 50 gm oats 200 ml milk 2 tbsp brown sugar 1/2 tsp cinnamon powder 1 tbsp butter 1 banana Chopped almonds 1-2 tbsp pomegranate seeds 1 tsp flax seeds Steps Take oats and milk in a pan and mix them well. Add 1 tbsp brown sugar and mix it well. Add cinnamon powder and let the oats cook for 4-5 minutes and then switch off the gas. In another pan take butter and 1 tbsp brown sugar. Add peeled and sliced banana and let it caramelise from both the sides. Put the oatmeal in a bowl and top it with carmalised banana, pomegranate seeds, chopped nuts and flax seeds and enjoy it hot.
