Made from the freshly concentrated product of cane sugar and date palm tree, Palm Jaggery Karupatti is a treat to the taste buds. The process of making palm jaggery does not involve the use of any chemical agents, hence all the natural minerals are retained as no preservatives are added. Palm Jaggery is proven to have several health benefits as well.
The sap from the palm sapling is extracted skillfully. The sap that oozes from the sapling is collected in earthen pots. The pots are coated with slaked lime to ensure that the sap does not ferment.
The unfermented juice is filtered and then boiled till it bubbles in iron vats. Once it's cooled, it is poured into molds - most farms use coconut shells for the molds. Once it is 'set' in these molds, the Palm Jaggery is ready for consumption.

Filteration
The cleared sap or neera after lime sedimentation and filteration is transferred in to boiling iron pan on traditional furnace
Boiling
During boiling, a white scum arises to the surface which is skimmed off and a few castor beans are crushed and put into allay frothing. After 5 minutes, boiling is stopped and pan is taken for setteling of lime.

Pour into mould
Again clear brown syrup is poured into boiling pan and clarification is added for getting crystalline palm jaggery
Cooling & Packing
Brown syrup is poured into mould to get solid block. After cooling, jaggery products will be packed according to the requirement
Storage
Packed products will be sent to the storage. According to the order, the packed products will be despatched the customers.
After cooling, jaggery products will be packed according to the requirement.
