Dates payasam using jaggery Ingredients 1 cup Dates , deseeded and finely chopped 3 Dates , deseeded and cubed for garnish 2 cups Milk , or coconut milk for vegan option 1/4 cup "Jaggery , grated" 1/2 teaspoon Cardamom Powder (Elaichi) 1 tablespoon Cashew nuts 1/2 tablespoon Badam (Almond) , chopped 1/2 tablespoon Pistachios , chopped 1 teaspoon Ghee Method To prepare deseed the dates and chop them into small pieces. In a mixer-jar, add dates, a cup of milk and grind them into a fine paste. Mix the ground date paste with the remaining cup of milk. Add cardamom powder and combine them well. Heat this payasa on medium flame and bring it to a brisk boil. Once it starts boiling, switch off the flame. In a small pan, add ghee and heat it over a medium flame. Beetroot Jaggery Cake Ingredients 1 cup whole wheat flour 1 and 1/2 tsp baking powder 1/4 tsp salt 1 medium sized beetroot or 1/2 cup beets paste 1 tsp baking soda 2 eggs 1/2 cup curd 1/4 cup "powdered jaggery" 1/2 cup olive oil 1/4 cup crushed butterscotch nuts 1/4 cup crushed walnut Instructions Beets Walnut Cake Pressure cook beetroot with enough water for 3 whistles. Blend cooked beets to smooth paste and keep aside. Whisk one egg in a bowl using electric beater or hand whisk. Add another egg and whisk again. Now add beetroot paste and blend well. Cranberry Chutney using jaggery  Ingredients 250 gm Fresh Cranberries 2 cups / 250 gms 50 gm Ginger 1/3 cup / 50 gms Grated or finely chopped 12 gm Green Thai chilies or Serrano peppers 2 tbsp / 12 gms finely chopped 40 gm Walnuts 1/3 cup/ 40 gms finely chopped 50 gm "Jaggery" 1 tbsp Oil 1/2 cup Water Spices: 1/8 tsp Asafetida Hing 1 tsp Mustard seeds 1 tsp Salt 1 tsp/ adjust as per taste 1/2 tsp Turmeric powder ½ tsp 1 tsp Cayenne pepper 1 tsp/ adjust as per your spice level. Jaggery Cardamom Big bun puff Ingredients  6 servings 1 +1/4th cup whole wheatand multigrain atta 1 teaspoon dry active yeast 2 tablespoons organic pure cow ghee 4 tablespoons "organic jaggery powder" 2 pinches salt 1 cup coconut milk 1/2 teaspoon cardamom powder Steps Dissolve the yeast in 1/2 cup lukewarm coconut milk and 1 tablespoon jaggery and keep to activate in a warm oven for 10 minutes. Pearl millet and jaggery gud cookie Ingredients 2 cups Pearl millet flour 1/2-3/4 cup "Jaggery crushed" 1/4 cup Sesame seeds 1/4 cup Water + for kneading as required Oil for moyan + for frying Steps Soak jaggery in some lukewarm water until totally melted. Take bajra flour and add oil little by little until it starts binding together when you press it in your fist.thats how you check moyan. Add the sesame seeds saving some to sprinkle later. Add in a little salt then gradually add the jaggery water mix and knead a smooth yet firm dough. Now heat oil in a wok. Ragi burfi using Jaggery Ingredients 1/2 cup ragi 1/4 cup grated coconut 1/2 cup "jaggery" 1 tbsp ghee 1.25 cups water A pinch cardamom powder soak the ragi for 3 - 4 hours. KALAJAMUN jaggery Ingredients 200 Gm Paneer 200 Gm Khoya 100 Gm Refined Flour 50 Gm Sooji 2 Tbsp Milk Powder 4-5 Sliced Almonds 1/4 Tsp Powder Cardamon as needed Saffron strands 4-5 Sliced Pistachios as needed Ghee for frying for syrup 750 Gm Sugar (if u want to make in sugar syrup) 300 Gm Jaggery (for making jaggery syrup) Steps Grate paneer, Add khoya, Suji, Milk powder in a container and mixture well.
