Easy Bread Pudding Ingredients needed Baguette (pieces) – as needed Eggs – 2 (at room temperature) Brown sugar – 1/4 cup firmly packed Vanilla extract – 1/2 tsp Ground cinnamon – 1/4 tsp Freshly grated nutmeg – a pinch Salt – a pinch Milk – 2 cups (at room temperature) Dried cranberries or raisins – 3-4 tbsp Powdered sugar for dusting METHOD: In a bowl, beat egg for a few seconds. Then add powdered sugar, vanilla extract, cinnamon powder, nutmeg, salt and beat until well blended. Add milk and beat until well combined. Now pour the mixture over the bread slices/cubes. Press down the bread with a spoon, now and then. Let it sit for 20 minutes. But the time the bread pieces will be evenly soaked. In the meantime preheat the oven at 175 degree C for 10-15 minutes. Scatter cranberries and raisins evenly over the surface of the soaked bread and press the dry fruits slightly to submerge. As I did not have cranberries, I have used dried apricots and raisins. This

CARAMELIZED CHICKEN (WITH JAGGERY) Ingredients: 4 servings 1 kg Chicken (boneless preferable) 1/2 cup Jaggery 1/4 cup Honey 200 ml Coconut sap 3 tablespoons Mushroom sauce 2 teaspoons Soya sauce To taste Salt 5 Dry red chilli Steps Put jaggery in a pan add water (200 ml) and heat it. When it dissolves, stop heat and seive it. In a pan add chicken, pour seived jaggery, mix it well. Add Honey, Soya sauce, mushroom sauce. Add coconut sap and salt. Put it in Sim. Cook for one hour.    JAGGERY ROTTI  Ingredients ½ cup jaggery powder or grated jaggery ⅛ cup water or 2 tablespoons water 1 to 1.25 cups whole wheat flour 1 teaspoon fennel seeds 1 tablespoon ghee or any neutral flavored oil 2 tablespoon desiccated coconut - optional ghee (clarified butter) as required for roasting jaggery roti Kneading Dough In a bowl take ½ cup jaggery powder and ⅛ cup water (2 tablespoons water).
