Wheat Jaggery Cake Ingredients 1 cup whole wheat flour 3/4 cup "jaggery" 1/4 cup oil 1/4 cup curd 1 tsp baking powder 1/2 tsp baking soda 1/2 cup milk Seeds: 2 tbsp pumkin seeds 1 tbsp flaxseeds 2 tbsp sesame seeds 1 tsp melon seeds Dry fruits: 10 almonds 6 walnuts 1/2 tsp vanilla essence Steps Blend together jaggery,curd and oil to a smooth paste. Sieve together wheat flour,baking powder and baking soda. Add flour to jaggery oil mixture in batches.Fold with gentle hands. Add seeds and dry fruits,add vanilla essence also.Add milk little by little to form an uniform batter. Grease a cake tin.Pour the batter in tin. Garnish with some dry fruits and seeds. Meanwhile pre heat an oven at 180°c for 10 minutes. Bake at 180°c for 30-35 minutes.(I baked my cake for 32 minutes) Demould and cool on a wire rack. When cool,serve. Whole Wheat Chocolate Rossette Cake with Jaggery Ingredients For Dry ingredients 2 cups whole wheat flour 1/2 tsp baking powder 1.5 tsp baking soda Handful nuts (optional) 1/2 cup Cocoa powder For Wet ingredients- 1 cup "jaggery chopped finely" 3/4 cup curd 1/2 cup milk at room temperature 3/4 cup oil Others ingredients : 2 tbsp oil 1 tbsp dry flour 1/2 cup salt for baking Steps Sift the dry ingredients in a deep bowl. Melt Jagger in microwave for 1 min in the interval of 30 seconds. Mix oil and curd in a separate bowl. Add melted Jaggery and mix. Now add dry ingredients in parts and fold with wet ingredients. Add nuts at this point. Now add milk if the mixture feeling too dry. Add in parts and mix it. Add salt in a deep vessel and heat for 10 minutes keeping it covered. Put a stand in it before covering. KALAJAMUN jaggery Ingredients 200 Gm Paneer 200 Gm Khoya 100 Gm Refined Flour 50 Gm Sooji 2 Tbsp Milk Powder 4-5 Sliced Almonds 1/4 Tsp Powder Cardamon as needed Saffron strands 4-5 Sliced Pistachios as needed Ghee for frying for syrup 750 Gm Sugar (if u want to make in sugar syrup) 300 Gm Jaggery (for making jaggery syrup) Steps Grate paneer, Add khoya, Suji, Milk powder in a container and mixture well. Add 1 st ghee and 2 tbsp milk to it. Make a smooth and soft dough out of it. Make medium size balls out of the dough. See to it that no cracks are formed. Fry this balls on low flame in ghee. Fry till dark in colour. To get perfect dark colour add some sugar to the dough.Let the balls cool a bit and then add in syrup. Take Sugar in a container add water to it and cook on high flame for 5 to 7 minutes. Add few strands Saffron and cardamom powder to it. If making Jaggery syrup. Ragi pudding with brown sugar

Ragi pudding with brown sugar Ingredients 3 tbsp ragi flour 2 tbsp "brownsugar" 1/2 tbsp coco powder 2 tsp choco chips 1/2 cup milk 1/2 cup water Method In a cup add water and milk, mix well,Set aside. In a pan add ragi flour,coco powder and sugar.Whisk it well. Now add the milk ,Whisk it well. Now switch ON stove and keep stirring using a whisk.It start to thicken and starts to come together. It take 8-10 mins for ragi cooked well. Add choco chips at this stage.Keep stirring and cook until thick and shiny. Brush water in the bowls and pour the pudding in bowls.Cover it and refrigerate. Jaggery Kheer Ingredients 1 cup rice 1 litre milk 1 cup Jaggery powder Pinch kesar 1/2 teaspoon cardamom powder 2 bay leaf 1 tablespoon pumpkin seeds Steps Firstly boiled the milk and after that put rice and cooked it till rice cooked and milk get thicker. Then add kesar, cardamom powder and mix it properly. After completely cooked and milk get reduced, switch off the flame. Then add Jaggery powder and mix it properly. Ragi nanakhatai using brown sugar

Ragi nanakhatai: 1 cup ragi flour 1/2 cup wheat flour 1/4 besan flour 1 cup powdered "brown sugar" 1 tspn baking powder 1/4 tspn baking soda 1 spoon curd 1 cup melted butter 1 spoon rava 1 spoon cardomon powder 🍪In a bowl, mix well sugar with butter, add all ingredients together one by one. Make it like roti dough. If that dough is too try add 1 or 2 spoon milk. 🍪Pinch medium size ball , press in a palm and make it circle shape and placed in a tray. 🍪Place a almond or pista in centre of nanakathai. 🍪Preheat the oven for 180 degree celsius and keep tray for 20 to 25 minutes.
