Berry Cobbler
Ingredients
4 cups mixed berries (fresh or frozen)
1/2 cup granulated sugar (for fruit)
3 tablespoons cornstarch
1 lemon (zested and juiced)
1 1/2 cups flour
1 teaspoon baking powder
1/4 cup brown sugar
1 tablespoon granulated sugar (for topping)
1 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons butter (cold, cubed)
3/4 cup cream
ice cream (for serving)
whipped cream (for serving)

Directions
Preheat oven to 350°F.
In a large bowl, combine berries, sugar, cornstarch, lemon zest, and lemon juice. Toss with a rubber spatula until all berries are coated.
Spray an 8x8-inch glass baking dish with nonstick baking spray. Transfer berries to dish.
In a food processor, combine flour, baking powder, brown sugar, granulated sugar, cinnamon, salt, and cubed butter. Mix to combine, then pour in cream and pulse until dough reaches a mealy consistency.
Distribute cobbler mixture evenly over berries.
Bake cobbler for 50-55 minutes, or until topping is golden brown.
Check to see if cobbler is done. Remove from oven or add time as needed.
Serve with ice cream or whipped cream. Can be stored for 1 week in an airtight container.
