Osmania Fruit Tart
Ingredients:
Osmania Tart base
120 gm butter, softened
80 gm jaggery powder
2 gm salt
20 gm milk
200 gm refined flour
10 gm vanilla custard powder
10 gm milk powder
¼ tsp baking powder
Spice cream
100 gm dairy cream
25 gm jaggery powder
½ tsp cardamom powder
¼ tsp nutmeg powder
a generous pinch saffron strands
a touch of vanilla extract
Fruits as er seasonal availability and/or liking
Instructions:
For Osmania Tart base
1.In a deep bowl, mix softened butter and jaggery powder. Cream till fluffy and pale yellow in colour
2. Add milk and cream again till all the milk gets incorporated.
3. In a separate bowl, mix refined flour, milk powder, vanilla custard powder, baking powder and sieve once and add to the creamed fluffy mixture.
4. Combine together. Do not over mix. Rest for 10 mins in the refrigerator.
5. Roll it into a thin sheet using very little or no refined flour.
6. Press these into tart moulds; press evenly. Refrigerate for 10 mins.
7. Dock the insides using a fork so that the tarts do not puff while baking.
8. Bake at 200° C for 10 minutes, in a preheated oven.
9.Cool down to room temperature and de-mould.
For Spice cream
1. Whip the chilled cream and jaggery powder till soft and shiny.
2. Add in the flavourings.
3. Mix well and chill.
