Keep mixing the maida and ghee till it starts holding together somewhat. At this point, add a couple of drops of water and knead it to make a dough. Divide the dough in four parts and roll one into a half an inch thick round. Cut them into vertical strips and then into 2-3 inch long strips. Repeat for rest of the dough balls. SWEET DOSA WITH JAGGERY AND COCONUT Ingredients 0.50 cup WHEAT FLOUR 1 tbsp RICE FLOUR WHITE 100 gms JAGGERY 0.50 cup WATER 3 gms RAISINS GOLDEN SEEDLESS 3 gms CASHEW NUTS RAW 1 no CARDAMOM 2 tbsp COCONUT MEAT RAW Instructions In a microwave safe thick glass bowl, add jaggery, half a cup of water and heat for a minute or until the jaggery melts down completely. Jowar with Jaggery Recipe Ingredients Sorghum (jowar) soaked overnight and cooked 1 cup Jaggery (gur) grated 1 cup Pure ghee 4 tablespoons Scraped coconut 1/2 cup Green cardamom powder 1/2 teaspoon Cashewnuts halved 1/2 cup Thick coconut milk 1/2 cup Method Step 1 Heat ghee in a deep non stick pan. Put ¼ cup scraped coconut in a blender jar. Add 2 tbsps water and blend with a hand blender. Step 2 Add sorghum to the pan and saute stirring at regular intervals. Jaggery Milk Pudding Ingredients 1/2 cup - raw rice (short or medium grain works best) 2 tbsp - moong dal (yellow lentils) 1 cup - powdered jaggery 4 cups - milk 1/4 to 3/4 cup - ghee 1/4 tsp - cardamom powder 2 to 3 tbsp - cashews and raisins A pinch of edible camphor How to Make Jaggery Milk Pudding Soak the powdered jaggery in a little hot water (about 1/2 cup or enough to cover it slightly). Karupatti Besan Burfi INGREDIENTS Gram flour/Besan – 1 cup Palm jaggery/karupatti – 3/4 cup Ghee – 1/3 cup Cardamom powder – 1/4 tsp DIRECTIONS In a pan, add ghee. When it melts add 1 cup of gram flour. Roast the flour for 10 minutes in low flame. The whole mixture will become frothy. Set it aside and add 3/4 cup of palm jaggery to a different pan with 1/3 cup water. Mix till the jaggery dissolves. Let it boil till it reaches 1 string consistency. Swipe the back of the ladle and check the consistency with index and thumb fingers. Then add the jaggery mixture to the gramflour mixture. Mix throughly in low heat. Rava Kesari with Palm Jaggery | Karuppatti Ingredients: 1 Cup Dry Roasted Jowar Rava 3/4 Cup Palm Jaggery/Karupppatti 4 Tbsp Coconut Oil/Ghee 1.5 Cups hot water for Cooking Jowar 1/4 Cup Water for melting Palm Jaggery 6 Cashew Nuts (broken into small pieces) 1/4 Tsp Cardamom Powder Directions: Add 1/4 Cup water to palm jaggery and allow it to melt. Heat a pan on medium heat and add 3 tbsp oil/ghee. Roast cashew nut pieces and remove. Add roasted rava and mix well with the oil. Add 1 Cup hot water and mix thoroughly so that no lumps are formed.
