Apple walnut and Jaggery cake
Ingredients
2 1/2 cups self raising flour
2 1/2 tbsp baking powder
1/2 cup of golden castor sugar
250g butter
2 cooking apples
2 tbsp vanilla extract
organic milk
1 tbsp ground cinnamon
1 tsp ground cardamoms
Jaggery Sauce
120g jaggery
240g double cream
2 tsp butter
Preparation
Preheat the oven to 180 degrees
Peel and slice the apples
Lightly grease the baking tray
Coarsely grate the jaggery
Blend the walnuts until they have a crumb like texture
Recipe
Combine the flour, baking powder, sugar, and butter until you achieve a doughy texture
Add the milk a little at a time, whisk until you have a thick batter consistency
Add the vanilla extract
Place the sliced apples inside the baking tray
Pour the batter over the apples and place in the oven, bake for 40 minutes
Remove from the oven, place a plate on the tray, flip the cake over so the apples are on top
Jaggery Sauce
Melt the jaggery in a sauce pan over a low to medium heat
Add the cream and butter
Pour the sauce over the cake, covering all the apple slices
Allow it to cool for 15 minutes so the sauce can set
