Jowar with Jaggery Recipe
Ingredients
Sorghum (jowar) soaked overnight and cooked 1 cup
Jaggery (gur) grated 1 cup
Pure ghee 4 tablespoons
Scraped coconut 1/2 cup
Green cardamom powder 1/2 teaspoon
Cashewnuts halved 1/2 cup
Thick coconut milk 1/2 cup
Method
Step 1
Heat ghee in a deep non stick pan. Put ¼ cup scraped coconut in a blender jar. Add 2 tbsps water and blend with a hand blender.
Step 2
Add sorghum to the pan and saute stirring at regular intervals. Add ground coconut and jaggery and stir till jaggery melts.
Step 3
Add green cardamom powder and cashewnuts and mix. Add coconut milk and mix. Let the mixture simmer. Roast the remaining scraped coconut in a non stick pan till fragrant.
Step 4
Garnish the sweet sorghum with roasted coconut and serve hot.
