Banana & Chickpea Soft Cookies
Ingredients
25 pcs
1 cup roasted Chickpea flour (Sattu)
1 cup + 4tbs all-purpose flour
1 egg
1 ripe banana
2 tbs butter
2/3 cup fresh milk (160ml)
4 tbs palm sugar
1/4 tsp baking soda
Steps
Mix both the flours, add 160ml milk and an egg
Mash the banana and add it to the mixture, then add the palm sugar
Then, add the butter then mix it well for about 15min until the texture is soft and thick
Lastly add the baking soda and let the dough rest for another 10min
Preheat the oven at 180°c while waiting for the dough to rest
Get a spoon of dough for each cookies onto the baking pan
Bake the cookies for 15-20min, then remove from the oven once it's done
Serve it hot for your afternoon tea / coffee. You can add Choco spread and simply sprinkle some icing sugar on top. Enjoy!
