Ingredients:
1 cup black glutinous rice
2 1/2 cups water
1 cup coconut milk
1 tsp fine salt
1 pandan leaf (optional)
1/4 cup dark palm sugar
Juice of 1 lime
1/4 cup thick coconut cream
Lime slices, to serve
Papaya wedges, to serve
Rambutans, to serve (optional)
Method:
⚫Wash rice under running water until water runs clear.
⚫Put rice, water, coconut milk, salt and tied pandan leaf, if using, in a medium saucepan over a medium heat.
⚫Cook, stirring occasionally, for 45 minutes or until rice is just tender.
⚫If rice becomes dry, add a little more water.
⚫Stir in palm sugar and lime juice.
⚫Set aside for 3 minutes. Remove pandan leaf.
⚫Spoon into glasses. Top each with coconut cream and lime.
⚫Serve with papaya and rambutans, if using.
