Wheat Orange Jaggery Cake(Eggless)
Ingredients:
1. 1 cup whole wheat flour
2. ¾ cup grated jaggery
3. ½ cup fresh orange juice
4. ¼ cup oil
5. 1 tsp baking powder
6. ½ tsp baking soda
7. ¼ cup curd / yogurt
8. ¼ cup fresh cream / malai
9. ½ tsp orange zest
10. 1 tsp vanilla extract
11. ¼ tsp salt
12. 2 tbsp chocolate chips for topping (optional)
Instructions:
1. Take the curd and baking soda in a bowl, stir well and make it smooth. Keep aside while you make ready the other ingredients.
2. Sieve the flour 2-3 times and keep aside.
3. Add jaggery and fresh cream to the curd mixture and whisk well.
4. Add oil and vanilla extract and whisk well.
5. Add the orange zest and orange juice and whisk the mixture well.
6. Add the flour, salt and baking powder into it and make a smooth batter.
7. Grease a cake pan with oil and preheat oven @180° C for 10 mins.
8. Pour the batter into the greased pan, tap the pan for 3-4 times to release any air bubbles and garnish with chocolate chips.
10. Bake the cake at preheated oven for 35 minutes. A toothpick inserted should come out clean. If it’s not done bake for another 5 minutes.
11. Remove the cake from oven and allow the cake to cool down in the pan for about 5-10 minutes.
12. Allow the cake to cool down completely before serving.
